Vegan Vanilla Truffles

INGREDIENTS
-2 tsp Vanilla Sugar
-3 tbsp Cacao Powder
-1 1/2 cups Dates (see note)
-3/4 raisins
-1 tbsp honey
-3 tbsp coconut oil
-2 cup almonds
-1/2 unsweetened shredded
coconut (optional for dipping)
-1/2 cup melted vegan chocolate

Use your blender to work the almonds until they’re are coarsely chopped. Pour into dish and set aside. Place dates in the blender, and blend for 30-60 seconds until they are finely processed and the mixture is rather sticky. Add raisins, coconut oil and honey. Blend together until you get soft shiny paste. Taking 1 tbsp at a time roll the mixture in your hands to form a nice smooth balls. Dip them into melted chocolate. (Optional: Dip some into shredded coconut ) Put them in the fridge for an hour to harden. Enjoy!

NOTE: If your dates are hard leave them in hot water for 2-3 mins to soften them. Instructions are for Vitamix.
